I'm surprised because I was told that all Gibson guitars past 1976 have 350k pots except the ones made in the custom shop - maybe that's where your guitars came from.

I think tone is subjective and what works for you is probably right!

Just putting this out there - I think Suhr would probably put covers on your pickups or swap them out for covered ones. My Thornbuckers without covers weren't just bright - they sounded kinda weird. The covered ones sound so great, and I think you'll have better results with those than having to back off the highs on your amp.

More power to anyone who wants to spend thousands for a headstock inlay. I'm not one of them.
