anybody know what wiring my speaker cab from 16 to 8 ohms will do for me in terms of volume?

This is impossible! Don't fuck up the speakers!
If you have 16OHm now, you could probably only wire them to 4OHm.
Since you don't seem to have any knowledge about this, do yourself a favor and leave it the way it is.
